What payroll records does a restaurant have to keep, and for how long?
Keep each employee's name, address, occupation, pay for each pay period, and hours worked each day and each week, for at least three years. Employees may inspect their own records, and the Attorney General can ask for them.

Yes, to the nearest five minutes, tenth of an hour or quarter hour, but only if the rounding averages out over time so staff are paid for all the time they actually worked. Rounding that always favors the restaurant is not allowed.

Yes. Anyone working more than six hours in a calendar day gets at least a 30-minute meal break. It can be unpaid only if the worker is free of all duties and free to leave; if you ask them to keep working or stay on site, the break is paid.

Because triple damages are mandatory. Under the Wage Act, an employee who wins must be awarded three times the unpaid or late wages, plus litigation costs and attorney's fees, and the court has no discretion to reduce that.

- Managers fixing punches from memory at the end of the week with no note. An edit with no reason looks like shaved time.
- Auto-deducting a 30-minute break that the employee worked through. If they worked, it is paid, and the form is how you catch it.
- Editing a server's clock-out back to the end of service when they stayed to count tips or close.
